Hello, kitchen friends! I’m very excited to share one of my favorite recipes –Sushi Cups– and according to my friends the best of the best!
This recipe is super easy to make, full of flavor and very sophisticated, so if you want to impress just prepare it and see!

For this recipe you will need the following ingredients:

  • Sushi rice
  • Salmon
  • Sushi nori sheets
  • Avocado
  • Sweet soy sauce
  • Sesame seeds
  • Olive oil
  • Sriracha
  • Chive
  • Salt and pepper

How to prepare:

  • Marinate the salmon 
    Gently cube the salmon. In a bowl, mix with sweet soy paste, a drizzle of olive oil, salt, pepper, and some sesame seeds. Let it sit for at least 1 hour so that the flavors sink in and get cozy together. 
  • Cook the sushi rice 
    Prepare the rice according to the package instructions, using just water and a bit of salt (no oil). We want it sticky and slightly firm so it holds shape in the nori. 
  • Cut and fit the nori 
    Trim the nori sheets into squares (I usually make 4–6 squares per sheet, depending on the size of your muffin tin). Place each square into a muffin-pan well. The nori acts like a little basket. 
  • Form the cup with rice 
    Spoon the warm sushi rice into each nori square in a muffin pan. Press down gently (but firmly) to shape a little “cup” — leave a small indentation in the center for the salmon. 
  • Fill with salmon 
    Into each rice cup, place a few marinated salmon cubes. 
  • Broil briefly 
    Pop the muffin pan into a preheated oven and broil for 15 to 20 minutes — this helps meld everything together and slightly “cook” the edges of salmon (while keeping it fresh inside). 
  • Dress & garnish 
    After they come out, top each cup with: 
  • A drizzle of sriracha (go easy or heavy — your call) 
  • Diced avocado 
  • A sprinkle of sesame seeds 
  • Bits of chive/onion 
  • A dash of soy sauce for presentation
